Grilled pineapple with goat cheese topping
A fantastic and simple dessert with heaps of flavour. You will definitely want more than one serving of this grilled pineapple with goat cheese cream! Use fresh pineapple for the recipe, as it tastes better than canned pineapple. Perfect dish for after an extensive barbecue, right?

Ingredients
for 6 persons150 ml | whipped cream |
100 g | Bettine goat's cheese slices natural or honey |
75 g | sugar |
20 g | fresh mint |
1 | ripe pineapple |
2 tbsp | walnut oil |
Preparation

- Whip the cream with the goat cheese and half the sugar. Keep two slices for garnish. Whip to a firm cream.
- Keep some mint aside for garnish, chop the rest, mix with the rest of the sugar.
- Cut the pineapple into six thick slices, brush with the walnut oil.
- Fry the pineapple slices in a grill pan or on the BBQ. Serve with the goat cheese cream and mint sugar.
- Finally, spread the rest of the goat cheese and mint on top.
While grilling, drizzle the pineapple with some rum for an extra festive dessert.
