Goat's cheese creme brulee
A delicious goat cheese crème brûlée. The perfect combination of savoury and sweet. Finished with blue fruit to present it as a culinary dessert. A delicious dessert to surprise your guests during the holidays.

Ingredients
for 4 persons4 | egg yolks |
60 g | fine caster sugar |
300 ml | whipped cream |
125 g | Bettine goat cheese honey |
6 tbsp | light caster sugar |
150 g | blackberries |
150 g | blueberries |
100 g | cup Bettine Pearls |

Preparation

- Preheat the oven to 150°C. Beat the egg yolks with the granulated sugar.
- Heat the cream with the goat's cheese in a saucepan over low heat and stir gently until the goat's cheese has dissolved.
- Pour the cream into the yolk mixture while stirring and stir until everything is dissolved.
- Pour the mixture into 4 larger or 6 smaller oven-proof trays. Place the trays in a large flat-bottomed ovenproof dish and pour in enough water to cover them by 2/3rds. Place the dish in the oven and cook the crème brûlées for 45 minutes to 1 hour, until solidified. Leave to cool with water and store in the fridge until use.
- Sprinkle the crème brûlées with the caster sugar and melt it with the blowtorch until a crispy crust forms.
- Decorate the crème brûlées with the blackberries, blueberries and bettine pearls.
