Tomato salad with couscous and Bettine No3
This couscous dish with tomato salad is super easy to make and also very tasty thanks to the combination of the creamy goat cheese No3 and the pomegranate seeds. The fresh mint, together with the spicy flavours and the freshness of the lemon finish the salad. It doesn't get any better, so enjoy it to the fullest!

Ingredients
for 4 Persons200 g | couscous |
1 tsp. | ras el hanout |
1 tsp. | paprika |
500 g | mixed tomatoes |
1 | red onion |
10 g | fresh mint |
1 | lemon |
1 tbsp | tahini |
150 g | Bettine No3 |
50 g | pomegranate seeds |
Olive oil, pepper and salt |
Preparation

- Prepare the couscous according to the instructions on the packet, with a dash of oil and the Ras and Hanout and paprika mixed in. Season to taste with some salt.
- Slice the tomatoes and cut the red onion into strips. Finely chop the mint.
- Divide the tomatoes between a plate and sprinkle with the onions and mint. Drizzle with the juice of half a lemon. Cut the rest of the lemon into wedges.
- Drizzle the salad with the tahini and some olive oil.
- Slice the goat cheese and break the slices into pieces. Divide the goat cheese over the salad and sprinkle with the pomegranate seeds and some more salt and pepper to taste.
