Winter goat cheese salad with stewed citrus fruit
Salads only for summer? No way! This delicious winter goat's cheese salad with stewed citrus fruit brings a lovely winter atmosphere with it. Besides, it is a perfect starter for during the holidays.

Ingredients
for 6 persons3 piece(s) | mixed citrus fruit (blood orange, orange, grapefruit) |
150 ml | white wine |
2 tbsp | sugar |
2 piece(s) | star anise |
1 pinch of | saffron |
4 stalks of | red chicory |
1 | large fennel bulb |
1 handful of | fresh dill |
100 g | Bettine pearls |
6 tbsp | virgin olive oil |
salt and pepper to taste |
Preparation

- Peel and slice the citrus fruit, place in a saucepan with the white wine, sugar, star anise and saffron and simmer over low heat for 5 minutes, until the fruit just starts to fall apart. Leave to cool slightly.
- Cut the endives and fennel into thin strips and coarsely chop the dill.
- Divide the red leaves and fennel among 6 plates and spoon the stewed citrus fruit on top. Drizzle with the olive oil and season with salt and pepper. Sprinkle with the dill and the Bettine Pearls.
