Winter goat cheese salad with stewed citrus fruit

Salads only for summer? No way! This delicious winter goat's cheese salad with stewed citrus fruit brings a lovely winter atmosphere with it. Besides, it is a perfect starter for during the holidays.

Preparation time 30 minutes

Ingredients

for 6 persons
3 piece(s) mixed citrus fruit (blood orange, orange, grapefruit)
150 ml white wine
2 tbsp sugar
2 piece(s) star anise
1 pinch of saffron
4 stalks of red chicory
1 large fennel bulb
1 handful of fresh dill
100 g Bettine pearls
6 tbsp virgin olive oil
salt and pepper to taste

Preparation

    1. Peel and slice the citrus fruit, place in a saucepan with the white wine, sugar, star anise and saffron and simmer over low heat for 5 minutes, until the fruit just starts to fall apart. Leave to cool slightly.
    2. Cut the endives and fennel into thin strips and coarsely chop the dill.
    3. Divide the red leaves and fennel among 6 plates and spoon the stewed citrus fruit on top. Drizzle with the olive oil and season with salt and pepper. Sprinkle with the dill and the Bettine Pearls.
